The pork is washed, cut into cubes and boiled. It froths well, and if the foam is black, then change the water and then add the grated carrot, the sliced zucchini and a whole onion (cleaned, of course). When the vegetables and the meat is cooked add salt to taste, then strain the soup. The onion in the soup is discarded.
Separately cut the other onion into small pieces and place in a pan with 3 tablespoons of olive oil. Let it fry until it turns golden, then add the rice and mix well until it becomes glassy. Pour the white wine and let it evaporate. Add the cooked meat and vegetables together with a pinch of strained soup. Stir continuously. When the juice decreases, add another tablespoon of soup and so on until the rice is cooked. At the end, add salt and pepper.
