I wanted to practice before Christmas and they came out delicious, with a crumbly shortbread type pastry. I will now be making these rather than buying shop bought ones! Makes roughly 18 pies.

  • 225g cold butter
  • 350g plain flour
  • 100g golden caster sugar
  • 1 pinch salt
  • 300g mincemeat
  • 1 small egg, beaten
  • icing sugar, to serve

  1. Make the pastry: rub butter into flour till mix resembles breadcrumbs. Add sugar and salt. Handling gently, combine dough into a ball and knead briefly. It'll be firm, like shortbread. You can use the dough immediately, or chill for later.
  2. Preheat the oven to 200 C / Gas 6. Line patty or muffin tins, enough for 18 pies. Press pastry into each hole, lining the bottom and sides evenly. Spoon mincemeat into the pastry cases.
  3. Pat pieces of dough with your hands into circles for lids. Cover the pies, pressing the edges to seal. (At this point you can freeze the pies, then defrost before baking. They freeze well for up to 1 month.) Brush the tops with egg and brush the tops of the pies.
  4. Bake for 20 minutes, till golden. Cool in the tin for 5 minutes before turning out to cool on a wire rack.
  5. To serve, lightly dust with icing sugar. They will keep for 3 to 4 days in an airtight container.

Tip

Some people have said their pies have stuck to muffin tin but I never had problems, but if you think your tin may stick then slightly grease beforehand.

  • 300g plain flour
  • 50g icing sugar
  • 150g butter, diced
  • 1 egg yolk
  • 411g jar mincemeat (check pack for vegetarian suitability)
  • 1 orange, zest only
  • 1 tablespoon whisky
  • Milk, for glazing
  • 1 tablespoon caster sugar, for sprinkling

Whizz the flour, icing sugar and butter together in a food processor until they form small crumbs.

Add the egg yolk and 1 tablespoon of cold water and process briefly to bring the pastry together (or you can do this by hand in a large mixing bowl, rubbing the butter into the flour and sugar, then bringing it all together with the liquid).

Wrap the pastry ball in clingfilm and chill in the fridge for 30 minutes. Preheat the oven to 190ºC, fan 170ºC, gas mark 5.

Once your pastry has chilled, roll it out on a floured surface and use a fluted round pastry cutter to cut out 16 rounds (roughly 9cm each), these will be the bottoms of your mince pies.

Press the rounds into a 12 hole bun/cupcake tin (use 2 tins if you have them, if not you can bake in batches). Lightly prick the bases with a fork.

Mix the mincemeat with the orange zest and whisky, and drop teaspoons of the mincemeat onto the pastry bases.

Re-roll the remaining pastry and cut out shaped lids for your mince pies (try using star, Christmas tree or holly leaf cutters).

Brush the tops with milk and sprinkle over the caster sugar. Bake in the preheated oven for 20 minutes, or until the tops are golden brown.

Allow to cool slightly in the tins, then remove to a cooling rack. Serve warm with lashings of cream or brandy butter, or let cool completely and store in an airtight container.

Cook's tip: Mince pies are perfect for making ahead and stashing in the freezer. Make as above up to step 8, then open freeze in the tins for 2 hours until firm. Transfer the frozen pies to plastic freezer bags, label and seal - these can be kept frozen for up to 3 months. When you're ready to cook, preheat the oven as above, pop the frozen pies back into the bun tins and glaze as above. Bake for 25 minutes or until golden.

The beauty of the home-made recipes is that they never look exactly the same. With a result that leaves rustic pastry crumbling the instant it enters your mouth, their simple preparation is easy and truly fun to make with all the family.

Rustic Jujube Mince Pies

This vegan and gluten-free take on the mince pie is seriously addictive, and we recommend making plenty as they won't last long!

Method:

  • Preheat your oven to 180C/350F/Gas 4. Start by making the filling and combine the raisins, sultanas and jujube fruit in a saucepan and bring to a medium heat.
  • Add a dash of water and leave to cook until the fruit is nicely stewed and really soft.Add in the mixed spice and agave and leave to simmer. Add a little more water if needed.
  • For the pastry, drain the soaked jujube fruits and add these to a food processor, as well as the buckwheat flour, ground almonds, coconut oil, agave, mixed spice and salt. Blend until well combined.
  • Lightly grease a cupcake/mince pie tray with coconut oil and use 2/3 of your pastry mix to press into the base of the moulds. Push the mixture around the sides of the moulds to create a little casing to hold the filling.
  • Add a spoonful of the raisin mixture to each of the pastry cases then, using the remaining pastry mixture, form a flat circular shape and pop this on top.
  • Decorate with a dried jujube fruit and repeat this for the other mince pies. Bake in the oven for around 11 minutes or until golden.

Recipe Summary

  • 1 ¾ cups all-purpose flour
  • ¼ cup confectioners' sugar
  • 2 teaspoons ground cinnamon
  • ⅔ cup butter, softened

  • ¾ cup prepared mincemeat pie filling
  • 1 egg, beaten
  • ¼ cup confectioners' sugar for dusting

Preheat oven to 400 degrees F (200 degrees C).

Sift together the flour, 1/4 cup confectioners' sugar, and cinnamon. Use a pastry cutter or two forks to mix in the butter until mixture resembles fine bread crumbs. Stir in the orange zest. Sprinkle with ice water, and gather dough into a ball. Roll out on a lightly floured surface to 1/4 inch thick. Cut out approximately 18 (3 inch) diameter circles, and 18 (2 inch) circles, rerolling dough as needed.

Line muffin cups or tart tins using the 3 inch pastry circles. Fill each pastry cup with about 1 tablespoon of mincemeat filling. Top with 2 inch pastry circles, pinching circles together to seal the edges. Brush the top of each pie with egg.

Bake pies in preheated oven until tops are golden brown, 15 to 20 minutes. Cool slightly on wire racks. Dust with 1/4 cup confectioners' sugar just before serving.


What are Mince Pies?

Mince pies are traditional British pastries that are made at Christmastime. If you’ve checked out my mincemeat recipe (link above), you’ll see that the mince pie filling is made with lots of dried fruit.

It’s very rich, which is why these little tartlets are the perfect serving size, although some mince pie lovers may disagree! This version is made with Grand Marnier and is doesn’t have any candied peel, which are two good things in my book.

Mincemeat used to have meat as one of the ingredients (therefore the name). However, nowadays, the most extreme recipe will use a little lard, which I did in mine. Note: butter alone, may be used.

Although it’s too late to make mincemeat in December as it needs to be premade months ahead of time, you can always plan for next year. Put this recipe on your calendar for this coming February or March.

However, it’s now December–so let’s get to the mince pie making!


Mince pies

Place 375g plain flour and 260g softened unsalted butter in a bowl and rub together to a crumb consistency.

Add 125g caster sugar and 1 large beaten egg, and mix together.

Tip out onto a lightly floured surface and fold until the pastry comes together, be careful not to over mix.

Wrap the pastry in cling film and chill for 10 mins.

Scoop the large jar of mincemeat into a bowl and add 2 segmented satsumas, 1 finely chopped apple and zest of 1 lemon.

Heat oven to 220C/200C fan/gas 7.

Roll out the pastry to 3mm thick.

Using a round cutter (about 10cm), cut out 16 bases and place them into muffin trays. Put 1½ tbsp mincemeat mixture into each. Brush the edge of each pie with a little beaten egg.

Re-roll out the pastry to cut 7cm lids and press them on top to seal. Glaze with the beaten egg, sprinkle with the extra caster sugar, then make a small cut in the tops.

Bake the mince pies for 15-20 mins until golden brown. Leave to cool before releasing them from the muffin trays and dusting with a little more icing sugar before serving.


From-the-freezer mince pies

Roll out a little over half the pastry on a flour-dusted surface to about the thickness of a £1 coin. Stamp out circles of pastry to line the holes of a 12-hole bun tin – an 8cm cutter should be about right. Re-roll the trimmings until all 12 holes are lined.

Spoon a little mincemeat into each, then roll out the remaining pastry with a little more flour. Use a 6cm fluted or plain round cutter to cut out 12 lids. Top the mincemeat with the pastry lids, push around the edges to seal, then poke 1-2 small holes into each to allow steam to escape. Wrap the whole tray well in cling film. Will keep in the freezer for up to 3 months.

To cook, heat oven to 200C/180C fan/ gas 6. Remove the mince pies from the freezer and brush the top of each with a little milk. Bake for 20-22 mins or until the pastry is golden and crisp and the filling piping hot.

RECIPE TIPS
CRUNCHY MARZIPAN MINCE PIES

Coarsely grate 100g block marzipan, then toss through 50g toasted flaked almonds. Sprinkle over the mincemeatfilled pies, then freeze and bake from frozen as directed, above.

FESTIVE MINCE PIES

Roll out the pastry for lids, sprinkle with 2 tbsp granulated sugar and pat or re-roll into pastry slightly to stick. Use a small (3-4cm) star, holly or heart cutter, or a mixture, to stamp out 12 shapes. Top each pie with one, then freeze and bake from frozen as directed, above.

CINNAMON CRUMBLE MINCE PIES

In a small bowl, rub together 50g cubed butter, 7 tbsp plain flour, 5 tbsp demerara sugar and 1½ tsp ground cinnamon. Sprinkle over the mincemeat-filled pies, then freeze and bake from frozen as directed, above. Save the pastry you don’t use for lids for a second batch of mince pies.
