This is the time to make the most of your freezer. Here are 25 party-ready dishes you can make a day or two before your guests even arrive.

Whether you are looking for appetizers, main courses, sides, desserts, or even breakfast dishes, there are plenty of festive recipes to whip up in advance, gifting you extra time to spend with loved ones.

A little additional planning will go a long way in preparation for your holiday party or feast. Cleaning out your freezer and going to the grocery store early in the week will ensure you will have all the shelf space and ingredients needed.

Cheesy Cauliflower Latkes

This modern twist on the traditional Hanukkah dish is the perfect way to keep your grandmother and gluten-free niece happy this year. Sweet Potato Casserole With Crunchy Oat Topping

This classic casserole often straddles the line between side and dessert (indeed, we've enjoyed the leftovers both ways). We dial down the sugar to steer the dish back to savory territory, and add a crunchy oat and nut topper for texture. A final drizzle of maple syrup just before serving gives the casserole a lovely sheen. While we call for a ricer in our master mashed potatoes, a potato masher is perfectly acceptable here since the spuds will be bound with an egg, topped, and baked. Chopped almonds or walnuts would be a delicious sub for the pecans.

Ham, Kale, and White Bean Soup

The water used to cook a pot of beans is really liquid gold, infused with aromatics and thickened with starch from the beans. It makes perfect sense to give the cooking liquid a second life as the broth for the soup (and save the trouble of rinsing and draining). The ham hock will season the broth and the beans as they cook; you won’t need additional salt once they are done. Instead of cooking the kale and carrots in the soup, give them a quick sauté and stir them in at the end so they retain their vibrancy.

A creamy, Parmesan-laced sauce is a no-brainer for an easy, cheesy pasta bake. Skip the jar and make your own with sautéed shallot and fresh lemon, picking up all the flavor from the same pan used to cook the chicken. If you have yet to try whole-grain pasta, this dish is a fantastic introduction: The noodles hold up nicely throughout boiling and baking and won’t overwhelm the dish with a strong wheat flavor. Keep whole-wheat panko in your pantry as your new all-purpose breadcrumb; the light, crisp texture will make an excellent crust for fish fillets or chicken breasts.

To Freeze: Freeze on a baking sheet for 12 hours or until solid. Transfer to a zip-top plastic freezer bag; freeze up to 6 months.

To Thaw: Not necessary! Bake straight from frozen.

To Bake: Place frozen pies on a parchment paper-lined baking sheet. Brush with egg wash; score. Bake at 450°F for 32 minutes.

Make ahead and freeze up to 1 month, saving the butter and herb coat for after reheating. The yeast should begin to foam after 5 minutes in the warm milk; if it doesn’t, it may be a sign that your yeast is no longer active and should be replaced. You may need to be more socially distanced than usual, or the crowd will be smaller, or you&rsquoll need to stay outside. But one rule hasn&rsquot changed: If you show up empty-handed, your Great Aunt Betty will never forgive you! From easy breakfast recipes to make-ahead desserts, these dishes that travel well include something for just about every occasion, whether you&rsquore going to Grandma&rsquos house for Thanksgiving dinner, your sister-in-law&rsquos for Christmas or a neighborhood potluck.

We need human interaction more than ever right now. Even though the Centers for Disease Control and Prevention says we should limit indoor holiday gatherings to the people we have quarantined with, you may get the opportunity to join a small socially distanced outdoor gathering. And what would Great Aunt Betty say if you showed up empty handed?

These recipes that travel well are proven winners. Just remember in this pandemic year to serve in a safer way. Either have everyone use their own utensils to serve or appoint one person to dish up the goods to limit the possibility of spreading the coronavirus.


A Classic Make-Ahead Menu for Not-So-Normal Holidays

The holidays always bring some chaos, but this year, the anxiety is of a different variety. Now, piled on top of all the stress of 2020, there’s the matter of figuring out how to get dinner on the table without the help of a small army of friends and relatives. In some ways, cooking for a few loved ones is much simpler than hosting a big dinner, but cooking a holiday feast without the help of a crowd brings its own challenges. Part of what makes an impressive spread feasible is the crowdsourcery, the potluck-y nature of the whole ordeal. So to recreate that little-bit-of-everything vibe this year, consider starting a few days early.

Planning a menu around dishes that can at least partially be prepped in advance will make it so much easier to get a feast, albeit a smaller one, on the table. All of the dishes on this list can be made in advance, but doing so is a more natural fit — in other words, a holiday kitchen disaster is less likely — for some than for others. Here are a number of classic dishes you can get started on at least a day early, ranked from no-brainer make-ahead options to ones that are slightly more difficult to prep (and that maybe you should simply plan to make on the day you’re feasting).

Candied yams

If you are a candied-yam lover, you almost certainly have strong opinions about whether or not marshmallows should be involved. But however you lean, this is an easy dish to make in advance. It’s worth noting, as you grocery shop and browse recipes, that what we call yams in America are actually sweet potatoes, not the starchy tubers native to more tropical climates. If you’re going sans marshmallow, you could make the entire dish the day before: Just put the pot in the fridge overnight, and to reheat the next day, add a bit of water and re-stir, as the starches and sugars will thicken and solidify overnight. If you’re going for more of a mashed-sweet-potato casserole with marshmallows on top, you can do the mashing one or even two days in advance. Then, before dinner, all that’s left to do is spread the sweet potato into a baking dish, top with your marshmallows, and bake.

Wild rice salad

This is an easy one to prep ahead of time, since it’s often served as a cold salad. Some recipes include instructions for making the dish in advance. The most time-consuming step in most recipes is in cooking the rice. And unless the recipe calls for the dish to be served warm, you can cook your rice the day before and refrigerate it overnight.

Roasted squash salad

Alongside the heavier side dishes, it’s nice to serve some more carbs, disguised as salad. If you have recipe-follower’s exhaustion, you can probably improvise this dish, mixing chunks of roasted delicata or butternut squash with a light green leaf like arugula, along with pomegranate seeds, pine nuts, and a tart vinaigrette, a classic combination of flavors. To get ahead, roast the squash a day or two in advance and prepare your salad dressing. Then when dinner comes around, it’ll take minutes to throw everything together.

Stuffing

It seems silly to provide you with a stuffing recipe I don’t know a family that doesn’t already have extremely strong opinions about how it should be made, and what should go into the casserole dish. If you do choose to follow a recipe, you’ll notice that some include a note about making the dish ahead. These recipes will instruct you to bake the stuffing one day ahead of schedule, then warm and crisp it in the oven when you’re ready to eat. To make great stuffing, you’ll want bread that is at least a day old, which means factoring bread-drying time into your schedule here. For truly excellent stuffing, start two days early.

Mashed potatoes

This is one of those gloriously simple dishes you definitely can make day-of, especially if you’ve gotten so much else done in advance. But if you’d rather make your mash one or two days ahead, it’s as easy as following your preferred recipe up until the serving step, and stashing the mashed potatoes in your fridge. When you’re ready to reheat, add a good bit more milk or cream as the mash warms through. The potatoes will have soaked up quite a bit of moisture as they cooled, and will need some assistance to become creamy again.

Mac and cheese

To cook mac and cheese the day before, it’s worth finding a specific make-ahead recipe to avoid a mushy outcome. The make-ahead recipe will instruct you to slightly undercook the pasta and fully cool the sauce before mixing the two, so that when you finish cooking the dish, each noodle is perfect. If you’re dreaming of stovetop mac and cheese, don’t try to do this more than an hour or two in advance. The cheese sauce will get gloopy as it cools, and the noodles will turn to sludge when reheated.

The main course

In the spirit of shrinking the holiday spread this year, consider roasting a chicken, not a turkey. One upside to this swap — other than not having to eat turkey for a month — is that a whole chicken takes a lot less time to cook. Roast the bird about an hour before you plan to set the table, so it has a little time to rest. There’s not much to do the day before, except salting the entire bird liberally. You might think salting a day in advance is overkill, but it makes an enormous difference to the taste and texture of the meat. If you decide you’d rather cook a steak, or make some kind of roast this year, the same goes: Salt your meat, and do it well in advance.

Roasted Brussels sprouts

Most of cooking Brussels sprouts is actually a matter of preparing to cook Brussels sprouts. Peel, trim, or wash these little guys a day in advance, and refrigerate the prepared sprouts in a Tupperware or zipper-lock bag until it’s time to season and bake. If oven space is a concern, you could even bake these a day in advance and reheat them at dinnertime. Be cautious, though, because an overcooked Brussels starts to taste sulphuric, and reheating in the oven won’t provide enough heat to regain any crisp bits that sogged overnight.

Green beans

Whether you go old-school with a cream-of-mushroom green bean casserole or you prefer your string beans another way, it probably makes sense to save this dish for day-of preparation. Reheating will cook green beans past the point of no return, and if all you’re doing is baking or blanching, that won’t take very long. You can trim the beans a day ahead, and leave everything else for a little closer to dinner time.

Freeze these vegetarian stuffed pasta shells and sauce in a casserole covered with sauce or individually for a quick solo lunch or dinner. Simply prepare the shells and cover with sauce and cheese, then refrigerate until cold. Freeze for up to 3 months and thaw overnight in the fridge when you’re ready to eat.


7 Make Ahead Meals For A Self-Catering Holiday

I was asked by a reader recently to recommend some meals that would be good to freeze ahead for a self-catering holiday. I though it was such a good question, I decide to write an article on the subject.

When you go on holiday, you are generally thinking about fully enjoying your break and whether your idea of a great holiday is relaxing with a book, walking in the countryside or going round historical monuments you don’t want to have to think about shopping and cooking.

Of course one way of ignoring the cooking is to eat out every night. This is lovely if you can afford it but it does put up the price of your holiday by some considerable amount.

Freedom – From The Kitchen

I often do self-catering holidays as I love the freedom of it and but like most other people I don’t want to spend too long in the kitchen – but nor so I want to spend a fortune on eating out every night. With a bit of forward preparation I can avoid eating out but also minimise time spent in the kitchen. The two main methods I will use is to take some home cooked frozen meals with me that just need heating up. I also take some easy bases such as pasta and rice that can easily be put with some local meat and vegetables to make a quick meal.

Condiments To Liven Up Your Meals

I also pack a small box of herbs, sauces and dressings as this can otherwise be something that can be greatly missed when cooking on holiday and it doesn’t take much space. Mixed herbs deals with most herb requirements and if you want a spicy meal you can make up your own curry paste or spice mix to take with you. Black pepper is also an essential for me and may be some homemade – or bought – salad dressing.

Cooking In Advance

So below I will recommend some of meals that I think are best for preparing and reheating. And you don’t have to have a separate cooking session. Just in the 2 or 3 weeks before, make twice as much as you cook it for your dinner and freeze half and keep it in a plastic container.

Take the frozen meals in an ice box with some frozen ice blogs to keep them frozen. If you are travelling for more than a couple of hours you may need to allow them to defrost and keep them in the fridge but they will still be good for 3-4 days. You can save your meal out until the end of the week, when you know you have some budget left – or eat in instead a with a special bottle of wine.

Eating Out With Less Expense

When we go on holiday we will often stop and have a coffee out with may be a snack or cake. This is still a special treat but without the expense of a full meal. It is still chance to sit down, enjoy some good food and drink and best of all relaxed time with the person or people who are with you on holiday. Another wonderful way to eat out in my opinion is to buy some takeaway fish and chips and eat them out of paper sitting by the beach! But that may not be for everyone!

Recommendations For Make Ahead Meals

Meals that will be reheated on the hob could be put in a plastic container. Dishes such as shepherd pir could be kept and frozen in the contianer it is cooked in (provided it is freezer proof)

Spaghetti bolognese (just take the pasta and some cheese) Reheat in the microwave, oven or hob
Vegetarian Shepherd’s Pie Reheat in the oven
Spicy Chickpea Stew – serve with rice Reheat in the oven or hob
Vegetarian Chilli
Savoury Beef mince
Chilli con carne heat on the hob and serve with rice and baked potatoes

On Arrival

When you arrive a your holiday home you want to celebrate and relax and not cook. However going out for a meal on the first night might feel like making too big a dent in your holiday budget, before you have even really started on your leisure time! I would recommend making a quiche in advance. Take some of your favourite salad leaves and dressing in a small bottle – then throw some baked potatoes in the oven on arrival, open a bottle of wine and in an hour or so supper will be ready with minimum effort!

Easy Meals To Make On Holiday

As a vegetarian in 2018, I don’t usually feel like an outsider when it comes to food… I think we generally live in a world that understands and caters well to meatless diets. Until the holidays come. And then suddenly it’s allll about the meat. And people tell me they feel sorry for us vegetarians, and I’m like, whaaaat? I forgot I wasn’t “normal”.

The funny thing is that the holidays are actually full of amazing vegetarian dishes. Like… all the sides. Everything else on the table that isn’t the meat.

How ’bout we just… make all of that extra yummy!

So I am here to offer up some fun inspiration for your holiday meals this year. Ways to add a little something extra special to your table, and make those side dishes shine, so that anyone at the table, whether they be vegetarian, vegan, keto or paleo, has ample opportunity for decadence.

Please remember that this is a team effort!

I have zero interest in bashing traditional Thanksgiving and Christmas dinners, which are cooked with so much love and care. I am aware that it is not an easy thing to prepare the meat centerpiece AND a bunch of fancy vegetable side dishes. So…

If you’re cooking for guests with speciality diets this year:

I hope this will help you find a couple of ways to delight those guests with something wonderful that everyone will enjoy sharing, without adding significantly to your workload. Several of the recipes included fit this description and are labelled “EASY”.

If you’re attending a holiday dinner at someone else’s house:

.. and you or one of the other attendees is vegetarian / another specialty diet, why not make one or two of these dishes to take with you?

Some of these are a little more labor intensive than you can realistically expect the main cook to prepare on the day, but will keep + travel really well. These are labelled “MAKE AHEAD” for recipes that can be made and then reheated on the day, or “PREP AHEAD” for dishes that can be prepared in advance but baked on arrival.

If you’re planning to bring a dish that will need re-heating, or if you bring along food that you’ve prepped but will need to cook in the oven on the day, remember to ask ahead for space to be made for this. Cooking for a crowd can be a logistical challenge, and showing up with an extra dish to work into the timelines can stress a cook out!

  • 1 kg peeled pumpkin, cut into 4cm cubes
  • 4 red chillies, coarsely chopped
  • 2 tbsp oregano
  • 60 ml (¼ cup) extra-virgin olive oil, plus extra to serve
  • 250 gm dried chickpeas, soaked overnight in plenty of cold water
  • 6 golden shallots, finely chopped
  • 4 garlic cloves, finely chopped
  • 1 litre (4 cups) chicken or vegetable stock
  1. Preheat oven to 200C.
  2. Combine pumpkin, chillies and oregano in a large roasting pan.
  3. Drizzle with a third of the oil, season to taste, toss to coat and roast, turning occasionally, until pumpkin is very tender and caramelised.
  4. Meanwhile, drain chickpeas and place in a large saucepan, cover with cold water, bring to the boil, then simmer uncovered over medium heat until chickpeas are very tender (45-55 minutes).
  5. Drain, reserving 1 litre cooking liquid, and set aside.
  6. Heat remaining oil in a large saucepan over medium heat, add shallots and garlic, and sauté over low heat until tender (12-15 minutes).
  7. Add stock and bring to the boil, then add pumpkin and chickpeas, and coarsely crush with a spoon.
  8. Add reserved chickpea liquid to achieve a chunky soup consistency.
