Mix the powdered sugar together with the butter (at room temperature) until it becomes a fluffy cream.

Add eggs and flour mixed with cocoa, baking powder and a pinch of salt, and finally the rum essence.

Mix well with a wooden spoon then add a teaspoon of dough and form balls, with wet hands in water. Place in the pan, flatten each biscuit with a spoon and make a model with a fork.

Bake on medium heat for 10-15 minutes.

Vanilla sugar and vanilla essence can be used instead of cocoa.

In a bowl, rub the butter together with the salt powder and sugar until you get a fluffy cream and you can't feel the sugar. We add eggs one by one, homogenizing after each one. When we're done, we all make the icing: on the bain marie we put the broken chocolate pieces together with the butter and a pinch of salt (salt intensifies the taste of the chocolate). Put a spoonful of icing on each biscuit, spread a little with a knife and place a piece of walnut in the middle. Let the icing harden and ready, they are good to serve.

First melt the butter and mix it with the oil. In a bowl put eggs, vanilla, a pinch of salt, powdered sugar and mix until light in color and doubles in volume.

We mix the semolina with flour and baking powder.

Pour the oil and cooled butter over the egg composition with sugar, then incorporate the dry ingredients mixed beforehand (flour, semolina and baking powder).

The composition obtained must be consistent but flow from the spatula or spoon used in mixing.

Cover the vase with foil and let it rest in the cold for an hour. The gray will swell and the composition will have the perfect consistency to be shaped.

If it is still soft, add another tablespoon of semolina, one tablespoon of flour or even both.

Wet your hands, take pieces of the composition and make balls smaller than a walnut that you roll in cocoa. It is important that the cocoa layer is as thick as possible.

I had 46 pieces.

Place them in a tray covered with baking paper.

Bake the cookies for 13-15 minutes at 180 ° C. When you take them out of the oven, they must still be soft to the touch, otherwise they will be crispier. After removing the tray from the oven, pull the paper immediately on a cold surface. Enjoy!

  7. After the dough has rested, we start making the biscuits using the mincer and the shapes of the mincer. I recommend you to use the star shape, the biscuits will be more attractive and a little bigger than if we used the other shapes.
  8. Place the biscuits in a tray lined with baking paper and put them in the oven at a temperature of 200-220 degrees Celsius for up to 10 minutes. Bake the crackers very quickly.
  9. Be careful not to remove them from the pan when they are still hot, as they break easily. After cooling, they can be easily removed from the tray.

Gina's advice:

If you want them to be less tender, add another 1 egg and 1-2 tablespoons of flour.

They can be glazed with white or dark chocolate, and the visual effect will be wow!
