Thai food: Roasted rice with vegetables

For almost four years since I became a vegetarian, fried rice with vegetables has been the food I order most often when I go to Thai restaurants. It is a kind of MBS of Thailand & # 8211 when in doubt I order it from the menu and you know that the chances are very high that I will get out of the equation.

I've seen it prepared countless times and I realized that it's super simple, but never until about 2 months ago I thought of making it at home. I don't know, somehow it seems to me that I take the bread from the mouth of the aunts who could make a baht with me hungry. Plus you need fish sauce to make it, something I rarely use at all, so I never have it in the house again, something you only find in big one-liter bottles that I don't feel like I store them in closets in vain.

Eventually I committed it, also provoked by my friend Mihaela, who said that Thai fried rice is her life (she has also lived here for a few years) but that she doesn't mind making it at home like the one from the restaurant. That something is missing or not kissing. Well, it's not possible, it's too simple. It turned out that Mihaela used soy sauce instead of fish sauce. It is similar but not enough to add to the equation. She was happy when I revealed the mystery to her.

The secrets with fried rice, beyond using the right ingredients, are as follows:

  • Have a good wok or a wide, deeper pan that never sticks to the bottom, no matter how hard you try.
  • Have a strong fire.
  • Prepare all the ingredients before you start working on the stove and keep it handy & # 8212 thing valid with a lot of Thai food, by the way.

If you have all this solved, it's serious that you can't help it. I hope you try, it's super quick to make and very tasty. You can convert it to a vegan version by replacing the fish sauce with salt and omitting the egg from the ingredients. It will turn out great anyway, only it will no longer taste like Thai food.

Make sure you move very fast once you start cooking the rice & # 8211 the fire is big and the wok is very hot, the risk of burning something is obvious. Keep the ingredients handy, don't let anyone tell you jokes and procrastinate pouring a glass of wine for a few minutes.

Broccoli rice

Whenever you combine two delicious ingredients, the result can only be spectacular! Are you trying the combination of rice and broccoli? Here is the recipe!

1 cup long grain rice
1 onion
50 ml oil
1 red bell pepper
1 cup of water
6 tablespoons broth
1 cup of heated water
salt pepper
finely chopped parsley
1 broccoli

Method of preparation

Put a pot of water and a little salt on the fire. When it starts to boil, add the broccoli and leave it for 7 minutes. Take it out and set it aside.

Chop an onion and fry it in 50 ml of hot oil. After the onion, add a red bell pepper, cut into pieces. Pour over 1 cup of water and mix well. Then add 3 tablespoons of broth and leave a little, until everything becomes like a sauce.

Wash the rice and add it here. Have 1 cup of water prepared and heated because the rice will absorb all the sauce from the above composition.

Start adding a little of the heated water so that all the vegetables boil with the rice. Leave for about 20 minutes, until everything is ready. Then add 2-3 tablespoons of broth, if desired.

Whole rice with lots of green

If it's spring, let it be green. Lots of green! And a small change to get out of the routine. For today, I wanted to spread whole rice with a lot of green and black rice on my plate and try something new in the kitchen: coconut oil, but this time not for sweets as before.

Because the fresh spring air has already made the winter cold windy, I decided to quickly, quickly empty the last reserves of carefully preserved frozen vegetables and make room for the news that will appear soon.

I admit that something very good came out, the combination of coconut and vegetables plus black is magical. First I got drunk with the smell of rooster mixed with browned green onions, then a rain of peas made its way into the pan over which fell a few bunches of broccoli, all kept crispy, only good for nibbling. Negrilica has a sublime scent that gives a special note to the rice, it is the piece of resistance set in motion by the sweet note of coconut oil.

So if you still have doubts, I will send you directly to the kitchen to try the magic combination of ingredients and tell me your opinion. Do you think unrefined coconut oil is too bold in food? I challenge you to use it!

Whole rice with lots of green

150 grams of brown rice

1 cup frozen peas

1 bunch of green onions

1 teaspoon grated coconut oil

a granulated garlic powder

Boil the brown rice, and in the meantime sauté the green onion in the coconut oil, then add the peas and broccoli and leave for 10 minutes with the lid on to simmer. At the end we add salt, granulated garlic, pepper to taste and blackcurrant seeds.

PS: The stewed vegetables will stay stronger, and if you like them softer, you can boil them and then add over the lightly browned onion.
