Vegan Pâté

I am the queen of unfinished projects I think that & # 8217s why my blog was so successful for me when I started it. Blog posts and recipes are pretty short term projects that don't typically require a long term plan for completion. However, ambitious recipes that are slightly intimidating because they & # 8217re traditional Vietnamese recipes or they & # 8217re kind of complex make me feel like I need to go the extra mile to perfect them. This vegan pâté was something I had been working on over the summer but I was concerned it wasn't smooth enough or creamy enough to be the right consistency.

I had put off the project for a while, worried about the amount of pâté I would have to eat if I didn't quite nail the recipe. I wanted to create something creamy, light, almost fluffy like the pâté I grew up eating. With some research on what typical animal-based pâté was, and honestly it was just ground up bits of animals (mostly liver). Not the most pleasant, and I was confident that I could veganize it into something much more palateable. I & # 8217ve tried a few vegan version in the past that use different nuts and spice profiles, but the thing that bothered me the most was how dead and gray it would look.

The pâté I grew up eating was fluffy and pinky brown, or if I was eating it from a traditional banh mi place, it would be more of a greyish brown (with a layer of fat or butter on top). It & # 8217s not the most appealing food, but it & # 8217s a comfort food of bringing pâté, a baguette, and a couple of crunchy vegetables with me to a park or the beach to enjoy with my family as a snack or picnic. Maybe that & # 8217s isn't the typical method of enjoying pâté, but that's what I resonate with the most.

The first iterations I tried involved pumpkin seeds and / or sunflower seeds, but I found it too grainy or chunky when blended in just my food processor alone. The flavor profile itself was tasty enough, but I wanted that creamy, luscious texture, and I knew that more fat definitely needed to be incorporated, but I didn't want it to just be fat that smoothed it out.

Much like how people soak cashews to soften them for desserts, I figured I & # 8217d try that with sunflower seeds! It worked like a charm. Creamy and luscious, especially with a high speed blender to completely pulverize every bit! Add about 2 tablespoons of vegan butter to give it that creamy fluffy texture, then tomato paste and paprika to add a touch of sweetness and color, then you have the pâté of my dreams! I added a touch of white pepper to add a tiny bit of heat, but it & # 8217s not spicy. It & # 8217s just a lingering warmth that you don & # 8217t realize is there until you wonder why you want to keep eating more.

I made this recipe in time for my lemongrass tofu banh my recipe demo at London VegFest this weekend (hope to see some of you there!) And I am so happy with the results! I won & # 8217t be demoing this recipe at the vegfest, but I & # 8217ll be showing you how I make the lemongrass mixture for the tofu, and then assembling the delicious banh mi! It feels really good and somewhat validating to be diving back into Vietnamese recipes, so I hope you have been liking it. Life has been a little up and down lately, mostly up, but you know me, ever so sensitive to the ebb and flow.

Raw roll with walnuts

The customers of our bistro appreciate the sweets we prepare here, and especially the raw ones. Even if due to the special situation, for this year's Easter I did not prepare the traditional boxes of assorted cakes, I thought I would give you an idea suitable for the occasion: raw roll with walnuts. Like any raw sweet, it is very consistent, but having natural ingredients it is a healthy sweet. Bonus: the combination of flavors is somewhat reminiscent of the classic cake.

What we need:

  • 200 gr oatmeal (people with gluten intolerance can use buckwheat flakes)
  • 100 g cashews
  • 100 gr dates
  • 100 gr figs
  • 30 gr raisins
  • 3 tablespoons coconut oil
  • vanilla
  • a tablespoon of agave or maple syrup
  • juice from half an orange.
  • 200 gr walnut
  • 3 tablespoons cocoa (or carob for small children)
  • 2 tablespoons agave or maple syrup
  • 20 gr raisins (+ optional, another 20 gr raisins that we sprinkle whole over the cream)
  • lemon juice
  • rum

How come:

We put the oatmeal in the food processor with the S blade and we make it flour. Add the cashews and grind it together with the oats.

After obtaining a flour, we put the dehydrated fruits (dates, figs and raisins) and we grind them until the dough binds.

Add the orange juice, agave syrup, vanilla and melted coconut oil at 30 gr C, mix everything very well on the robot.

Remove the dough and set aside until creamy.

For the cream, grind the walnut kernel in the robot with the S blade, add cocoa, raisins, agave syrup, a few drops of lemon and rum.

We mix them until they bind. We will get a thicker cream.

The more meticulous part now follows. Spread the top on a food foil with a rolling pin, and over the top sheet, spread the cream well with a spatula. Optionally sprinkle raisins over the cream.

Roll as tight as we can, wrap in foil.

Let the roll cool for 2-3 hours or overnight. Store in the refrigerator for 5-6 days or in the freezer for 30 days.

How does Ligia Pop place herself in the context of a raw vegan lifestyle? Is it a defining state for you right now? Are you an "extremist" from this point of view?
I generally promote a healthy lifestyle that doesn't just involve eating. When I say healthy lifestyle I mean mind, body and soul - no side should be neglected, because they all work as a unitary whole and cannot be separated. If we ate healthier, but continued to be preoccupied with negative thoughts or conflicts, then we would be eating healthier in vain. There is a lot to discuss here, but the bottom line is that we are like an extremely complicated operating system, which must be carefully maintained if we want everything to work normally and there to be no "short circuits".

As for food in general, I have not been and will never be an extremist. Everyone has the freedom to choose whatever diet suits them. My goal is just to remind people of raw foods and their benefits in the daily diet, and my recipes, dressed in beautiful clothes by skilled housewives, can help us benefit from all the nutrients we need.

How and why did you switch to raw food? Was it a sudden transition or did it happen rather gradually?
I started to study and gradually apply raw food starting with 2008 and the results were not long in coming. I always wanted to change something for the better in terms of diet and I knew that a diet rich in raw foods was what I lacked. It was clear to me that we need to do something for ourselves when we are young and that we are also the ones who have control over our future well-being. We have always been afraid of weight gain, wrinkles, oppressive diseases and we knew that everything that falls into the category of vegetables and fruits in their natural state can protect us from these transformations or aging of the body that we usually consider normal. I wanted to age well and have as few health problems as possible, a lot of energy and a sharp mind even at an advanced age. At first it was not easy for me, because all the recipes I tried seemed too strong to taste. Anyway, there were new tastes that my body was not used to and it took a while to adjust. Along the way I started to invent my own recipes, according to our Romanian taste. That's how I realized that many delicious dishes can be made from the simplest ingredients possible, and the mentioned changes did not take long to appear.

It was amazing to watch the changes in my body depending on the proportion of raw foods introduced gradually. Large transformations occur when the percentage of diversified raw materials approaches 90% and I am referring here to miraculous changes achieved by detoxifying and cleansing the body. I noticed the same changes in me: first of all, the lack of constipation, which is, I think, the first cause of the diseases of our century. There have also been changes in skin texture and eye clarity. Hair and nails have also become healthier and shinier. I got rid of the liver and gall pains, which came as a bonus with the consumption of meat dishes. We also got rid of that weight and lack of energy, which were replaced by a state of well-being and peace of mind.

What exactly does "raw vegan" mean?
"Raw vegan" means a vegan diet (no animal ingredients, only vegetables) without fire. The fire-free kitchen uses only ingredients of vegetable origin, combined as correctly as possible from a nutritional point of view. We use vegetables, sprouts - sprouted vegetable seeds grown in branches - which are 30 times richer in nutrition than mature, leafy plants, used for juices, fruits, seeds, nuts, seaweed, superfoods, etc. In more detail:
• Vegetables, in a wide variety, and many leafy used in salads and juices.
• Germs and shoots - germinated seeds of vegetables grown in shoots, which are 30 times richer in nutrition than mature plants and are major sources of complex proteins, easy to assimilate and digest.

Based on these ingredients, you can make variations and combinations that are nutritionally correct, special for the tastes of gourmets. When I say raw = raw, I don't just mean empty carrots and salads. The fire-free vegan diet includes many gourmet recipes, which many do not even dream of. In my books, Vegan recipes without fire and Desserts for Healthy Parents and Children, the diversity of recipes is obvious, from almond milk, sesame or rice, walnut bread and various combinations of sprouted seeds to pizza, pâtés and vegetable butters, walnuts with exceptional taste, meatballs, mayonnaise mushrooms, pickled vegetables, Extremely simple and delicious desserts, cakes, ice cream and healthy cakes, especially for our children.

This lifestyle is not an extremist one, but simply promotes the consumption of as much food as possible in its natural state. Everyone is free to choose their own ratio between raw vegan food and cooked vegan / vegetarian food. The vast majority of raw foodists consume a percentage of 60-80% raw, the remaining 20-40% being vegetarian / vegan cooked food, such as vegetable soups, slow cooker preparations, at a temperature of 40˚ C for a longer period, steamed or baked in clay or ceramic pots, in a word as natural as possible.

Clearly, we can't have a raw vegan lifestyle without a raw vegan diet. But it can be the other way around: only food, without interventions and on other levels?
Having a healthy lifestyle means taking care of the three sides of the body: mind, body and soul. I think that in vain you have a healthy diet if you are constantly bitten by negative thoughts or internal and external conflicts or if you do not seek to have a quality sleep every day (between 22 and 7), if you do not exercise and if you do not follow and many other aspects of a healthy life.

There is another very important aspect of eating raw food: you can lose weight! Testimony is Angela Stokes - her case was presented on CNN - who lost 72.5 lei with a raw vegan diet. For further clarification, I also recommend the movie "Fat, Sick & Nearly Dead", where obese people, near the limit of health or with a heart already finished, lost 30 to 60 kg with the help of cures of 30-60 days, only through juices made from fruits and lots of leafy vegetables. It was a treatment closely supervised by doctors, who kept an eye on all the tests. These, initially devastating, visibly improved from day to day: cholesterol levels dropped, heart and immune system strengthened, calcium and all minerals were in order, proteins as well, and so on. We know that you have developed several projects in this regard: editorial appearances, fairs and culinary shows or in the form of discussions. What is the relationship between them - did they influence each other, did they go naturally or did they come at the request of the public?
90% of our projects have been planned in advance. I knew exactly what the public needed, because I tried to bring to those interested exactly what I had been looking for a few years before.

It is an almost endless list of books, articles, videos for optimal information, without a specific order. I believe that the widest possible information is generally the key to a healthy lifestyle. When you stop information, you are lost or lost on the road, because weekly, if not daily, new information comes on the market and it's a shame to be left behind, especially when you care about your health.
