- Place ingredients in bread machine in order suggested by manufacturer. Bake on normal or basic cycle.

When making this recipe, you need to know what to expect from a spelt bread. Spelt is very healthy, but does not contain gluten like its wheat-relative. This means that as the yeast converts the sugars to gas (which normally causes a pillowy, airy dough) the bread dough without gluten cannot retain the air in bubbles in the dough. The result is a very typical European bread that is heavy, dense, can be sliced SUPER thin and served much like soft crackers. It is also, however, dense with nutrients and I thought this was a very good gluten-free recipe for bread!-14 Jul 2008
I disagree with Silverstar61 - the bread was great! I made this today with exact receipe, in a Morphy Richards bread machine using the basic cycle as directed. Worked fine, as good as any spelt bread I have bought from a bakery. Good rise, taste and texture. Will make this regularly in future. Used readily available organic spelt flour.-29 Mar 2009
Hi all, I love spelt bread and originally bought it from Asda - they make several spelt breads, my fav being the honey version. It practically goes with anything, I had Tuna on spelt bread and it was deeeelish lol! and it doesn't make you feel bloated or stodged down.I'm gonna try this today, one thing I would note about the instructions is the reference to the basic setting. For some people that can be a crucial detail missing and it should really be more accurately described and the timings related in some way to the brand of bread maker used by the original poster.A note to people, spelt bread ISN'T gulten free, its has less than ordinary breads but it still contains some gluten.-04 Apr 2012
