This simple baklava recipe uses walnuts and calls for less butter than most.

  • 1 (500g) packet filo pastry
  • 450g walnuts
  • 100g caster sugar
  • 1 tablespoon ground cinnamon
  • 5 tablespoons butter or margarine
  • 5 tablespoons vegetable oil
  • 700g caster sugar
  • 500ml water
  • 2 tablespoons lemon juice

  1. Preheat oven to 180 C / Gas 4. Grease a 20x30cm baking tin.
  2. Cut filo pastry to size of tin, and place half the sheets in the bottom of the tin. Grind walnuts with 100g sugar and cinnamon in food processor or blender. Spread ground walnut mixture evenly over filo. Place remaining filo sheets on top of walnut mixture.
  3. Melt butter with oil in small saucepan over low heat or in microwave. Brush melted mixture over top layer of filo. Cut baklava into diamond shapes with a sharp knife.
  4. To make syrup: Combine 700g sugar, water and lemon juice in large saucepan over medium-high heat. Bring to the boil, then remove from heat. Let cool before pouring over hot baklava.
  5. Bake the baklava for 30 minutes in centre of oven, or until golden brown. Pour cooled syrup over hot pastry. Let cool before cutting into small diamonds and serving.

Leaving the honey out wasn't so good. The honey is the key ingredient to this irressible greek favorite. This would be perfect with the honey in it. The honey adds the most flavor along with the other ingredients.-23 Nov 2005

Good recipe--a friend of mine made baklava from this recipe... One thing I would change would be to use melted butter instead of margarine. I have been using a recipe from my Greek cookbook for years and it just seems to taste better with butter. Also, after cutting into diamond shapes I put a clove in each piece before baking. It adds just a hint of flavor and it looks nice too! But remember to remove the clove before eating!-13 Dec 2004
