Tiramisu recipe with caramelized nuts

Caramel:

Caramelize the sugar in a small bowl. When it has become liquid and amber-colored, add the walnuts and mix lightly, until all the walnuts are covered with caramel. Pour over a piece of baking paper and leave to cool. After they have cooled and the caramel has hardened very well, they are put in a thicker bag and crushed with a hammer.


Melt the chocolate over low heat together with the whipped cream. Set aside and let cool, then put the dish in the refrigerator until the cream hardens. It can also be put in the freezer to shorten the waiting time.

Mix the chocolate cream until it becomes fluffy. Separately, mix mascarpone with yogurt, then gently mix the 2 compositions, mixing with a spatula. At the end, add ~ half the amount of caramelized nuts, the rest is kept for garnish. Soak the biscuits in coffee. It is syruped very little and only on one side, so that it can absorb the moisture of the cream.

A layer of biscuits is formed in a cake pan lined with aluminum foil or food foil. Pour half of the cream, cover with another layer of slightly syrupy biscuits, the rest of the cream and another layer of biscuits. Wrap well in foil and refrigerate for a few hours, until it hardens.

Pour the cake on a plate, cover with a thin layer of whipped cream and cover with the rest of the caramelized nuts.

2 tablespoons vegetable oil (grape seed oil, palm oil, sunflower oil, coconut oil or butter)


Cover a square tray with aluminum foil.

Mix the cream cheese together with the mascarpone, powdered sugar and honey until they become a homogeneous and creamy mixture. Hydrate 1 sachet of gelatin in 200ml grape juice, then heat it a little to dissolve the gelatin, then incorporate it into the cream cheese.

Soak the biscuits in grape juice, quickly, form a layer in the prepared tray, then pour the cream cheese and put the cake in the fridge for 2 hours.

Dissolve the other sachet of gelatin in the remaining grape juice until all the gelatin has dissolved, then pour it on top.

Put the tiramisu cake back in the fridge overnight.

The next day, take the grape tiramisu cake out of the tray with the edges of the aluminum foil, cut it into pieces and decorate it with frozen grapes.


Hungarian Christmas cake with dried fruit

This stuffed cake is as typical in Hungary as panettone in Italy or roscón de Reyes in Spain. Prepare it with the tulip and put an international note on your table!

Preparation

Preheat the oven to 180 ° C. Dissolve the yeast in hot milk, add a teaspoon of sugar and let it rest for 10 minutes.

In a large bowl, mix the flour and tulip margarine by hand until the dough begins to crumble. Then add 2 beaten eggs, yeast, milk, sugar and a pinch of salt. We're struggling. If the dough is too sticky, add more flour.

When the dough is soft and smooth, divide it into balls (2 or 4 balls) and set aside.

We prepare the filling and, for this, we boil the water and the powdered sugar to prepare a thick syrup. Add the walnuts, breadcrumbs, raisins and lemon peel. We keep stirring all the time. Remove the pan from the heat and let it cool.

Sprinkle some of the flour on a kneading board and stretch each ball to form a rectangle up to 5 mm thick.. On top, spread the filling evenly, leaving an edge of about an inch around. Spread the edges with the beaten egg.

Roll out the dough and make sure we carefully seal the edges so that the roll is closed and the filling does not come out.
Place the cake on a baking tray or greased mold. Beat an egg and paint the cake. Leave it in the fridge for 35 minutes and then bake it for 25 to 30 minutes.

We will not open the oven while it is cooking, because the cake would break.

Tropical Tiramisu with Coconut

Use the mixer to prepare the cream. Beat the yolks with the sugar until you get a pale color composition and fine texture. Separately mix the mascarpone with the milk, then add the eggs. Add the coconut.

Separately, beat the cream until it foams, then place it over the mascarpone composition. No longer mix, but lightly homogenize, by folding, using a spatula.

Peel a squash, grate it and cut it into small pieces. Grind the raspberries with a fork, which you have previously mixed with the sugar.

Soak the biscuits in tropical juice (just like the original recipe for Tiramisu). I didn't read the recipe well at first, and I ground the biscuits, then moistened them with the juice. :)

Divide the compositions into 4 and place them in this order in a glass: raspberries, mascarpone cream (one-eighth of the total amount), soaked biscuits, diced fruit, then another layer of mascarpone (one-eighth of the total amount).
I thought the taste of coconut was very strong, so next time I will either give it up altogether or reduce the amount.

Divide the ingredients in half and make two sheets in a row.

Preparation: Mix brown sugar, flour, coconut, salt and baking soda. Mix all these ingredients well and add the egg and a little melted butter. Knead everything until you get a homogeneous dough.

Chop the chocolate and add it to the dough together with the walnuts and knead again to distribute them evenly. We make balls about 3 centimeters in diameter and crush them a little. Place them on the baking tray with non-stick paper and prepare the cookies in the preheated oven at 190 degrees for about 10 minutes. Once finished, let them cool on a shelf.
