This creamy terrine is made with a mixture of smoked salmon and cooked fresh salmon and is well worth making for a dinner party or special occassion.

  • 600g fresh salmon
  • 100g smoked salmon
  • 40ml cream
  • 2 egg whites
  • 1 or 2 sun-dried tomatoes marinated in oil, diced
  • 2 tablespoons frozen garden peas
  • 1 tablespoon thyme
  • 1 tablespoon dill

  1. Preheat the oven to 180 degrees C / gas mark 4. Pour some water into a roasting tin that you'll use as a water bath to cook the salmon terrine.
  2. In a food processor, blend the cooked salmon, smoked salmon, egg whites, cream and fresh herbs.
  3. Stir in chopped sun dried tomatoes in oil and the peas.
  4. Pour into an oven proof silicone mould or non stick loaf tin and set in the roasting tray that has water in it (adding more water to the tin if necessary - it should come 3/4 up the side of the mould.
  5. Carefully transfer the water bath to the oven and cook for 50 minutes.
  6. Refrigerate for at least 8 hours or overnight.

Easy Salmon Terrine

Terrines can sometimes be a bit labour-intensive but my Easy Salmon Terrine couldn’t be simpler. It makes a great starter if you have a group of friends coming for dinner, and can also be served as a canapé with drinks.

INGREDIENTS

  • melted butter, for brushing
  • 300 g (10 ½ oz) salmon fillet, skin removed and pin-boned
  • 2 egg whites
  • ice cubes
  • 300 ml (10 ½ fl oz) thin (pouring) cream
  • 200 g (7 oz) smoked salmon, coarsely chopped
  • 1 Tbsp finely chopped tarragon
  • 1 Tbsp finely chopped chervil
  • 1 Tbsp snipped chives
  • ½ tsp salt
  • ½ tsp cayenne pepper
  • 1 ½ Tbsp olive oil
  • micro herbs
  • mayonnaise or aioli
  • thin slices of toasted baguette or crisp breads

METHOD

  1. Preheat the oven to 150°C (300°F). Brush the inside of a 1 litre (34 fl oz 4 cup) terrine mould with melted butter.
  2. Cut the salmon fillet into large chunks. Put them in a food processor with the egg whites and blend for 5 minutes, or until very smooth.
  3. Fill a large bowl with ice. Scrape the salmon paste into a medium bowl and set it over the bowl of ice. Stir in the cream, smoked salmon, herbs, salt, cayenne pepper and olive oil and keep mixing until you reach a mayonnaise consistency.
  4. Pour the salmon mixture into the prepared mould. Place the mould in a deep roasting tin and pour boiling water into the tin to come about two-thirds of the way up the mould. Bake for 20 – 25 minutes, or until the blade of a small knife comes out clean. Remove from the oven and leave in the mould to cool completely.
  5. Garnish with micro herbs if you like. Serve with mayonnaise or aioli (or even a cocktail sauce) and thin baguette toasts or crisp breads.

Elegant, looks refining, can be made in front and is delicious. This recipe for a salmon cod terrine. And therefor ideal to serve at the holidays.

This great entrée can be made in the morning while served at dinner time. The salmon combines beautiful with the cod and the carrot doesn't only gives a fresh slightly sweet flavor but also a beautiful color.

  • By preparing the terrine in the oven while using a water bath, it will cook gradually and won't burn.
  • Loosen the terrine by placing a bowl on top of the cake tin and turning it all at once. This keeps the form intact.

Line 9x5x3-inch loaf pan with plastic wrap, leaving overhang. Using electric mixer, blend first 5 ingredients and chopped salmon in large bowl. Spread 1/3 of cheese mixture evenly in pan. Top with 1/2 of sliced salmon, 1/3 of cheese mixture, remaining salmon, then remaining cheese mixture. Cover chill at least 4 hours and up to 3 days. Turn terrine out onto platter. Serve with baguette slices or crackers.

Salmon Terrine

Prepare bread mix according to package instructions and knead in herbs. Place dough in a rectangular baking dish (30x20 cm) (approximately 12x8 inches). Bake the loaf at temperature provided, remove from oven and allow to cool.

Cut crust from the bread and reserve for another use (such as breadcrumbs). Cut the bread crosswise into 3 pieces.

Soak gelatin in cold water for 10 minutes. Rinse radicchio and chop finely. Rinse and trim scallions and cut into thin rings. Beat cream until very stiff and add cream cheese, scallions, radicchio, lime zest and season with salt and pepper. Drain the gelatin, melt in a small pot on the stove, stir in some cream cheese and then quickly stir into remaining cream cheese along with cream.

For the tartare, soak gelatin in cold water for 10 minutes. In a small pan, warm the fish stock and add gelatin. Stir to dissolve and set aside. Chop salmon very finely and marinate with lemon juice. Rinse and trim scallions and chop very finely. Add to the fish stock. Stir in the very cold salmon.

To build the terrine, line a mold with plastic wrap. Place a piece of bread down as the first layer. Spread with cream cheese mixture, followed by salmon tartare. Leave to set in the refrigerator for about 2 hours.

Meanwhile prepare the salmon cream. Soak the gelatine in cold water. Mix cream cheese with quark and milk and season with salt, pepper, lemon juice and zest.

Whip the cream. Purée smoked salmon finely, mix in.

Place dripping wet gelatin in a small saucepan and dissolve over low heat. Mix gelatin with 2 tbsp cream cheese, then combine with the remaining cheese mixture.

Remove fish terrine from the refrigerator and unmold. Arrange with salmon cream on a serving dish, cover with salmon and garnish with lime wedges and radicchio. Refrigerate again for 30 minutes, cut into pieces and serve.

I even know quite a few vegetarians who will not come anywhere near fish, but they can’t resist the occasional slice of smoked salmon.

And that is also why I am absolutely sure that this smoked salmon terrine will be a big hit on your next dinner party! Because it is a very easy starter to make in advance, something I love to do when I’m having guests over for dinner!


Salmon and Leek Terrine

INGREDIENTS

2 medium sized leeks (around 850-900g)

1/4 teaspoon cayenne pepper

1/2 cup of chopped parsley and a little thyme

A brine of 4 teaspoons salt mixed into 2 cups of water

METHOD

Cut the bottom end off the leeks, then trim back to about two thirds, leaving a little of the green end on. Cut the leeks into 1/2 lengthwise.

Place the leeks into a shallowish saucepan add the butter and a cup of water. Season with a little salt and pepper. Bring to a boil, cover and cook until tender, around 10 minutes. Take off the heat and leave to cool.

Trim the salmon fillet and cut into even finger thick strips lengthwise. Put these aside and weight the off-cuts you need 200g of trimmings so if you need to make up the weight add a little from the strips. Try and keep the salmon cold, refrigerating throughout.

Place the trimmings into a food processor along with the teaspoon of salt. Puree, then add the egg white. When well blended add 50mls or 1/2 of the cream to make a smooth mousse, do not over mix at this stage. Transfer mix to a stainless steel bowl and place back into your refrigerator.

Place the salmon strips into the brine for 5 minutes, strain and place them onto a clean tea towel to absorb any excess liquid. Discard brine.

Pre-heat your oven to 150˚C, and line a terrine or pâté mould with cooking paper, lightly oiled.

Line a terrine or pâté mould with the leeks using the outer leaves, the centres will be used. Try to overlap enough so that they can be folded over the top to finish the terrine.

Take the mousse mix out of your refrigerator and with a spatula blend in remaining cream, finish by adding the cayenne pepper.

Spread a thin layer of the mousse onto the base of the leeks. Place in a couple of salmon strips, a sprinkle of chopped parsley and thyme, some remaining leeks, then repeat until all is used.

Fold over overlapping leeks, cover with a fitting layer of cooking paper, then a wrap of cooking foil.

Place terrine into a baking tray, place into oven then pour in hot water up to one third of the terrine dish. Bake for one hour, then test with a metal skewer or if you have a temperature probe 70˚ in the middle is good. Take the dish out of the oven and as it is cooling place a light weight on top.

Chill preferably overnight.

When ready to serve, dip the whole terrine into hot water for a minute then invert onto a board. Cut into even slices serve with a salad or herb garnish and a little mayonnaise.

Note For a midsummer version line the terrine with courgette slices that have been quickly sautéed. Using the same basic recipe many variations can be used as the seasons change.
